The Mediterranean sea bass, is a delicious main course, very easy to prepare but extremely tasty. The sea bass has a delicate flavor, suitable for many types of preparation baked in foil and also excellent grilled. The Mediterranean sea bass is cooked in the oven, in a bed of tomatoes, with black olives, capers and thyme.


2 x 350g Sea Bass

100g Black Olives

2 Cloves of Garlic

200g of Cherry Tomatoes

1 Tbsp Capers

Black pepper, thyme and sea salt to taste

1 Tbsp Parsley

6 Tbsp Extra Virgin Olive Oil


To prepare the Mediterranean sea bass, first remove the scales with a knife. Clean the viscera of the two sea bass. For the filling: sea salt, black pepper, thyme and garlic. Sea salt and black pepper need to be placed in the inside of the belly and then insert the cloves of garlic with thyme.  Sprinkle the dish with four tbsp of extra virgin olive oil in the inside and place the herbs in the outside as well.  Cut the tomatoes in half and arrange them between the two fish. Then add the black olives and capers. Sprinkle with sea salt, a drizzle of extra virgin olive oil, the thyme leaves and a little bit of chopped parsley, then bake at 300 degrees for about 35-30 minutes. Once cooked, remove the sea bass from the pan and finish to cook the other ingredients in the oven. Buon Appetito!
